Cut remnants of cold broiled moose
steak or roast in one inch cubes. Cover with boiling water, add one half
onion and cook slowly for one hour. Remove the onion and thicken gravy
with flour diluted in cold water and season with salt and pepper.
Parboil potatoes eight minutes in
boiling salted water. When cool cut them into one fourth inch slices and
add to the pie. Place in a buttered pudding dish, cool, cover with baking
powder biscuit mix or pie crust and bake in a hot oven. If covered with
pie crust make several incisions in the crust so that gases may escape.
*Caribou may be used in place of
moose.
